The patio at El Colibri opens to the stars and the DJ plays great tracks. This is the place for a romantic cocktail before heading out for dinner. The bar doesn’t open till 8 pm and they do serve snacks and small dishes, but the big draw here is the elegant cocktails, all made with Mexican ingredients, with syrups and juices prepared on site. Try the Clover Rose, a mix of Mexican Diega gin with house made raspberry and pink pepper syrup and aquafaba – it’s not just delicious – it’s a gorgeous shade of pink.
